Delicious Lemon Herb Chicken Recipe

Sharing another recipe on this Wednesday for y'all and this one is super yummy! I found the original recipe for this dish last week and tried it and quickly realized that it needs some tweaking. So this weeek I tweaked the recipe and decided that I should share my own verison of the recipe for y'all! 


Like I said before, this is a recipe that I found online but tweaked because some of thier measurements just were not working, so I am sharing the way that I made it! I will share the original recipe as well HERE just in case anyone wants it or wants to see what I changed. The things that I changed I either changed because it wasn't enough of something or that the chicken was way too dry! 

Lemon Herb Chicken


Ingredients: 

  • 4 boneless skinless chicken breasts
  • 3 tablespoons butter
  • Garlic Powder
  • Onion Powder
  • Lemon Pepper Seasoning
  • Tony Chachere's Creole Seasoning
  • Olive Oil 
  • 2 cups uncooked rice
  • Juice of 1 lemon (you don't need to juice it before!)
  • 3 cups chicken broth

Directions: 

  1. Lay your chicken on a cutting board, or a cookie sheet ( this is what I used and it was super easy!) and glaze each chicken breast with olive oil. 
  2. Season one side of your chicken with garlic powder, onion powder, lemon pepper seasoning, Tony Chacheere's and some lemon juice. Then flip each chicken breast over and repeat all of the seasonings again. 
  3. After seasoning the chicken cover it and place it in the fridge for 15-30 minutes to let everything soak into the chicken. 
  4. Remove your chicken from the fridge and melt the  butter over medium heat in a large skillet or pan, make sure that the pan you are using can be covered compeltely with a lid. If you don't have a pan or skillet large enough for this use a large pot, it will work the same! 
  5. Brown the chicken in the butter for 1 minute on each side, your chicken will not be cooked through yet, it will cook through later! After that remove your chicken from the pan and place it to the side for a moment. 
  6. Add the rice, chicken broth, and the other half of the lemon (squeezed) to the pan. Place the chicken on top and cover the pan and let simmer on medium for 20-25 minutes or until the liquid is completely gone. Make sure to closely watch once it gets to about 15 mintues because for our stove our chicken and everything was cooked in about 17 minutes!
  7. Garnish with lemon wedges and serve!
Pre-Warning: This dish is not a pretty one ahahah, which is why I have no pictures of this one. But despite it's appearance it's really good and a great meal to make during the week! If you try it out make sure to post it on your Instagram story and tag me or send it to me so I can post it!
